I’ve been a lawyer in Washington, DC, for more than ten years, and am starting a twelve-step program to cope with my infatuation with chocolate. Jokes aside, I’ve transitioned out of the practice of law and into the fantastical realm of cacao and chocolate. In the last few years, I’ve immersed myself in this world, including studying at L’Ecole du Grand Chocolat in southeastern France and at the Barry Callebaut Academy in Chicago, completing a pastry program at L’Academie de Cuisine, and staying in the jungles of southern Belize to experience firsthand how cacao is grown, harvested, and transformed into chocolate. Through this blog, I share my observations about this transition, cacao, and chocolate. Or, as I call it, Vie de Cacao.
